Classic French Eclairs


  • One half cup of unsalted butter of margarine
  • One cup of water
  • One cup of all-purpose flour
  • One quarter teaspoon of salt
  • 4 eggs
  • 10 ounces of vanilla or french vanilla instant pudding mix
  • 2 cups milk
  • 2 cups whipped topping
  • 16 ounce can of milk chocolate frosting


  • 12 eclairs


  1. Prehead oven to 400 F
  2. Bring butter and water to a boil in a saucepan
  3. Add flour and salt into the pan
  4. Cook, stirring vigourously, until mixture forms a ball
  5. Remove mixture from the heat
  6. Add eggs to mixture one at a time, beating until smooth after each addition
  7. Spoon 12 strips on large greased backing sheet
  8. Bake for 30 minutes or until exteriors are golden brown
  9. Split open lengthwise and scoop out doughy centers
  10. Cool on a wire rack
  11. Prepare pudding mix using 1 cup of milk and 10 ounces of pudding
  12. Blend two cups of whipped topping with prepared pudding mix to make filling
  13. Spoon filling into eclairs
  14. Replace the eclair tops
  15. Warm frosting in microwave on HIGH for 3 minutes or until soupy
  16. Drizzle frosting over eclairs
