Classic French Eclairs
Ingredients:
- One half cup of unsalted butter of margarine
 - One cup of water
 - One cup of all-purpose flour
 - One quarter teaspoon of salt
 - 4 eggs
 - 10 ounces of vanilla or french vanilla instant pudding mix
 - 2 cups milk
 - 2 cups whipped topping
 - 16 ounce can of milk chocolate frosting
 
Makes:
- 12 eclairs
 
Directions:
- Prehead oven to 400 F
 - Bring butter and water to a boil in a saucepan
 - Add flour and salt into the pan
 - Cook, stirring vigourously, until mixture forms a ball
 - Remove mixture from the heat
 - Add eggs to mixture one at a time, beating until smooth after each addition
 - Spoon 12 strips on large greased backing sheet
 - Bake for 30 minutes or until exteriors are golden brown
 - Split open lengthwise and scoop out doughy centers
 - Cool on a wire rack
 - Prepare pudding mix using 1 cup of milk and 10 ounces of pudding
 - Blend two cups of whipped topping with prepared pudding mix to make filling
 - Spoon filling into eclairs
 - Replace the eclair tops
 - Warm frosting in microwave on HIGH for 3 minutes or until soupy
 - Drizzle frosting over eclairs
