Peanut Butter Cookies

Ingredients:

  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 cup shortening
  • 1/2 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
    or
    1/2 cup granulated sugar and 2 tablespoons molasses
  • 1/2 teaspoon vanilla
  • 1 egg
  • 1 1/4 cups flour (sifted or stired before measure)

Serves:

  • Two dozen cookies

Directions:

  1. Sift together flour, salt, and baking powder
  2. Cream shortening, peanut butter, and sugars
  3. Beat vanilla and egg into shortening mixture
  4. Stir flour mixture into shortening mixture, blending well
  5. Shape dough into 3/4 inch balls and place on greased baking sheets
  6. Flatten each cookies with the tines of a fork (flour fork to keep it from sticking as necessary)
  7. Bake at 375 degrees for 10 to 12 minutes
