Pan Crisped Potatoes

Ingredients:

  • 2 lbs potatoes cubed into 1/2 inch cubes
  • 1/4 cup extra virgin olive oil
  • Salt and pepper to taste
  • 1 teaspoon minced garlic

Serves:

  • Four dinner side portions

Directions:

  1. Place potatoes in a pot of salted water
  2. Bring to a boil
  3. Simmer for 10-15 minutes, or until nearly tender
  4. Heat oil in a non-stick skillet for 3-4 minutes
  5. Add potatoes, salt, and pepper
  6. Cook for 15 minutes (or until brown all over) stirring occasionally
  7. Added garlic
  8. Cook for 5 minutes stirring frequently
