Pan Crisped Potatoes
Ingredients:
- 2 lbs potatoes cubed into 1/2 inch cubes
- 1/4 cup extra virgin olive oil
- Salt and pepper to taste
- 1 teaspoon minced garlic
Serves:
- Four dinner side portions
Directions:
- Place potatoes in a pot of salted water
- Bring to a boil
- Simmer for 10-15 minutes, or until nearly tender
- Heat oil in a non-stick skillet for 3-4 minutes
- Add potatoes, salt, and pepper
- Cook for 15 minutes (or until brown all over) stirring occasionally
- Added garlic
- Cook for 5 minutes stirring frequently
