Creamy Crab Over Puff Pastry

Ingredients:

  • 2 tablespoons butter
  • 1 1/2 tablespoons flour
  • One cup milk
  • One egg yolk
  • 2 tablespoons cream
  • 2 tablespoons grated Parmesan cheese
  • 2 tablesppons shredded Swiss cheese
  • 1/8 teaspoon onion salt
  • 1/8 teaspoon cayenne pepper
  • 2 cups flaked frozen crabmeat, thawed
  • 6 frozen puff pastry rounds

Serves:

  • 6 dinner servings

Directions:

  1. Melt butter in a small saucepan over medium heat.
  2. Blend in flour.
  3. Cook, whisking continually for 1 minute.
  4. Whisk in milk.
  5. Cook, whisking continually for 6 minutes or until thick.
  6. Remove from heat.
  7. In a separate dish, beat egg yolk with cream.
  8. Stir a small amout of hot mixture into egg yolk.
  9. Stir egg yolk mixture into hot mixture.
  10. Cook, whisking continually for 2 minutes.
  11. Wisk in Parmesan cheese, Swiss cheese, onion salt, salt and cayennne pepper.
  12. Add crabmeat to mixture.
  13. Heat to serving temperature over low heat, stirring occasionally.
  14. Bake puff pastry using package directions.
  15. Place cooked pastry on plates, and spoon crab sauce over pastry.
  16. Serve immediately.
