Chocolate Waffle Cone on WaffleCone Express

Ingredients (Yield: 6-8 cones):

  • One ounce unsweetened chocolate (recommend Hershey’s)
  • Two tablespoons butter
  • Two whole eggs
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/2 cup sifted all-purpose flour
  • Two tablespoons Dutch processed cocoa powder
  • One teaspoon vanilla extract (optional)

Directions:

  1. Preheat the WaffleCone Express for about 5 minutes. Start with the Color Control setting of 2.5 to 3, but change as necessary for the best results.
  2. Place the chocolate and butter in a small saucepan.
  3. Melt over low heat.
  4. Stir to combine the chocolate and butter, then set aside to cool for about 5 minutes.
  5. Beat the eggs and salt in a small bowl with a fork until well blended.
  6. Beat in the sugar and beat until sugar is incorporated and the eggs have lightened in color slightly, usually about 1 minute.
  7. Stir in the melted chocolate and butter.
  8. Add the flour and cocoa powder, stirring slowly until all flour is moistened.
  9. Beat another 15 seconds to incorporate the flour and remove all lumps.
  10. Stir in the vanilla extract if using.
  11. Spoon 3 tablespoons (1.5 ounces) of batter in the center of the waffle iron.
  12. Close the lid and lock the latch.
  13. Bake for 1 minute and then check for proper color. Cook an additional 20 to 40 seconds if necessary.
  14. Quickly remove the waffle from the waffle iron onto a clean cloth towel.
  15. Use the cloth to help lift and roll the waffle around the cone form.
  16. Hold the cone a few seconds to set its shape and then place on a wire rack or iced tea glass to cool.
