Chocolate Waffle Cone on WaffleCone Express
Ingredients (Yield: 6-8 cones):
- One ounce unsweetened chocolate (recommend Hershey’s)
- Two tablespoons butter
- Two whole eggs
- 1/4 teaspoon salt
- 1/2 cup granulated sugar
- 1/2 cup sifted all-purpose flour
- Two tablespoons Dutch processed cocoa powder
- One teaspoon vanilla extract (optional)
Directions:
- Preheat the WaffleCone Express for about 5 minutes. Start with the Color Control setting of 2.5 to 3, but change as necessary for the best results.
- Place the chocolate and butter in a small saucepan.
- Melt over low heat.
- Stir to combine the chocolate and butter, then set aside to cool for about 5 minutes.
- Beat the eggs and salt in a small bowl with a fork until well blended.
- Beat in the sugar and beat until sugar is incorporated and the eggs have lightened in color slightly, usually about 1 minute.
- Stir in the melted chocolate and butter.
- Add the flour and cocoa powder, stirring slowly until all flour is moistened.
- Beat another 15 seconds to incorporate the flour and remove all lumps.
- Stir in the vanilla extract if using.
- Spoon 3 tablespoons (1.5 ounces) of batter in the center of the waffle iron.
- Close the lid and lock the latch.
- Bake for 1 minute and then check for proper color. Cook an additional 20 to 40 seconds if necessary.
- Quickly remove the waffle from the waffle iron onto a clean cloth towel.
- Use the cloth to help lift and roll the waffle around the cone form.
- Hold the cone a few seconds to set its shape and then place on a wire rack or iced tea glass to cool.
